Quick and Easy Recipes for RV Camping

One of the things I love about traveling in our travel trailer is that you have a little kitchen at your disposal to whip up a quick meal! When you’re traveling, eating out every meal can add up in cost, and be bad for my waist line.

Don’t get me wrong, when we’re traveling in our camper, we’re on vacation. So the last thing I want to do is be stuck in the kitchen. But whether it’s breakfast, lunch or dinner, it’s easy to throw a few simple ingredients together to feed your family, without too much prep or clean up work!

Whole Wheat Banana Pancakes

I found this recipe over at 100 Days of Real Food – I just love her stuff! She whipped up a batch of these pancakes recently after a month long trip in a RV. I’m not one for a big breakfast (mainly because I like a big dinner!), but every once in a while, pancakes are just necessary. With a little pre-trip planning and prepping the dry ingredients beforehand, you could turn these out on top of your RV stovetop in no time.

Tasty Turkey Tacos

Easy to throw together and customize depending on your family’s palette. Make this a vegetarian option by swapping out the meat for black or pinto beans. Top with fresh veggies, cilantro, shredded cheese, avocado and sour cream for a fun fiesta!

Burrito Roll Ups

I created this recipe out of necessity once when I was trying to use up a package of soft tacos. It’s easy to prep the meat ahead of time and pack with you in a ziplock bag – or if you have access to a grill, you can use that to give your burritos some smoky flavor inside.

Ingredients:

  • 8 soft taco tortillas (white or whole wheat)
  • Ranch dressing or salsa
  • 1 lb. chicken tenders, seasoned with taco seasoning and baked or grilled until cooked
  • 1 package yellow rice, prepared as directed
  • Shredded Mexican blend cheese
  • Cilantro, chopped

Directions:

Take one tortilla and place a thin layer of Ranch dressing or salsa on one side. Layer the tortilla with a small amount of rice (spread it to cover the tortilla, leaving the edges clear so you can fold it up), 1 to 2 chicken tenders, and sprinkle with shredded cheese and cilantro.

Carefully fold the top and bottom edges of the tortilla up, then tightly roll the tortilla, jelly roll style, into a burrito. Place seam side down on a hot panini press or into a hot skillet with another skillet on top to press down. Heat through for 3 to 4 minutes. Repeat with remaining tortillas.

These burrito roll ups are great dipped in salsa, and served alongside a simple green salad!

Slow Cooker Chili

I need to just get a slow cooker and keep it in our travel trailer – I’m guessing I could even find a used one at a thrift store that would work. Because I think serving up some warm chili on one of those fall camping trips when the nights are crisp and football is on in the background sounds absolutely delightful!
